Ripasso is a traditional technique where the must is re-fermented on the dried grape skins of the Amarone. The wine then matures in 30-hectolitre Slavonian oak barrels for 1 year and for a further six months in bottle. It is ruby red in colour and displays notes of cherries with chocolate.
